More S'mores Please! 


Graham crackers with melted marshmallows and chocolate. Summer is PRIME s'mores time, but with these cakes, brownies, cookies, cupcakes, and, yes, actual s'mores, you'll be making s'mores desserts all year long.  Here are some of our favourite twists on a classic treat!

S'mores Cupcakes 

What you will need:

  • 3 c. graham cracker crumbs (about 20 full-sheet graham crackers)
  • 12 tbsp. melted butter
  • 1/2 c. granulated sugar
  • Pinch kosher salt
  • ​Devil's food cake mix, plus ingredients called for on box
  • 1 c. chocolate chips
  • 1/2 c. heavy cream
  • 24 marshmallows

Instructions: ​
  1. Preheat oven to 350° and line two 12-cup muffin tins with cupcake liners.
  2. Make cupcakes: Combine graham cracker crumbs, melted butter, sugar, and salt in small bowl. Press about 1 tablespoon of mixture into each cupcake liner to make mini crusts.
  3. Prepare cake mix according to box instructions and divide batter between liners and bake for a couple minutes less than the box instructs, about 16 minutes.
  4. While the cupcakes are baking, make a quick ganache: Place chocolate chips in a medium, heatproof bowl and set aside. Heat heavy cream in a small saucepan over medium heat and bring to a gentle simmer. Pour hot cream over chocolate chips, whisking constantly until smooth.
  5. When cupcakes are almost done baking, pull them out and spoon about a tablespoon of ganache onto each cupcake, then top each with a marshmallow. (If it feels unwieldy, place the marshmallow on its side.) Return trays to oven and bake—watching closely!—until marshmallows are golden and very soft, 4 to 5 minutes more. ​​

Salted Caramel S'mores

and you don't need a campfire! ​

What you will need:​
  • 10 Belgian Waffle Butter Crisp Cookies or you can use regular graham crackers if you prefer
  • 5 salted caramel filled chocolate square, 1 ounce each I used Ghirardelli
  • 5 marshmallows torn in half

Instructions: ​
  1. Set rack in oven to highest setting. Turn on broiler.
  2. Line a baking sheet with foil for easy clean up. Place five cookie crisps on the baking sheet. 
  3. Top each cookie with one chocolate square.
  4. Tear each marshmallow in half, place two halves on top of the chocolate.
  5. Place baking sheet in the oven under the broiler.  Watch carefully, allow to broil for 30 seconds to 2 minutes, until the marshmallows are golden brown and puffed up, and chocolate is starting to melt.
  6. Remove from oven. Top each with another cookie and serve right away.

S'mores Nachos 

What you will need:​
  • 2 sleeves graham crackers, broke into thin squares
  • 30 marshmallows
  • 3 c.​ semisweet chocolate chips


Instructions: ​
  1. Preheat oven to 350 degrees F. In an oven-proof skillet, layer graham crackers and half the marshmallows and 2 cups chocolate chips. Top with another layer of marshmallows and bake until marshmallows are soft and golden, about 10 minutes. (Broil 2 minutes if you want them more golden.)
  2. Meanwhile, melt remaining 1 cup chocolate chips on low heat. Drizzle with melted chocolate and serve immediately.

Roasted Better S'mores


Roasted Berry S’mores are a fruity twist on a campfire classic that we found on jellytoastblog.com.

What you will need:​
  • 1 quart fresh strawberries, hulled and quartered
  • 1 pint fresh blueberries
  • 1 pint fresh raspberries
  • 1/3 cup sugar
  • 1/2 vanilla bean, seeds removed
  • 1/8 teaspoon cardamom
  • Giant Marshmallows
  • waffle cookies (or graham crackers or shortbread cookies)
  • milk chocolate bars

Instructions: ​
​
  1. Preheat oven to 450 degrees. In a large bowl, toss together berries, sugar, vanilla and cardamom. Spread onto a rimmed baking sheet and bake for 20-25 minutes or until the fruit is soft and tender. Allow to cool.

  2. Assemble S'Mores: Roast marshmallows until golden brown and gooey. Place a piece of milk chocolate onto one waffle cookie. Top with roasted marshmallow and drizzle with reserved berry sauce. Top with second waffle cookie. Enjoy!

Oreo Cookie S'Mores 

no graham crackers? no problem! 


What you will need:​
  • 12 Double Stuffed Oreo Cookies
  • 12 large marshmallows
  • 12 thin squares Hershey’s chocolate bar

Instructions: ​

  1. Preheat the broiler with the rack in the second highest position.
  2. Twist the tops off the cookies. Arrange the cookie bottoms, cream-side up, on a baking sheet. Put a piece of chocolate on the cream filling and then top with a marshmallow, laying on its side (not upright.) 
  3. Broil until the marshmallows are golden, about 30 seconds (watching closely so they don’t burn.)
  4. Sandwich each with the remaining cookie tops.
  5. Eat while they're melted and gooey!
  6. (These can, of course, also be made over a campfire!)
