Mediterranean Sole

We stumbled upon this recipe by accident. Like many of you, whether you’re hosting guests or thinking what can I feed my family tonight? We’ve got the answer! This simple Mediterranean baked fish recipe is delicious plus it’s healthy!

​What you will need:
  • 400g Highline, Sole fillets
  • 2 tbsp. Olive Oil
  • ¼ cup Chopped Tomatoes
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp dried basil
  • ½ tsp minced garlic 
  • Butter to crush the fish fillets 
  • Lemon wedges 

Instructions:
BBQ: wrap each in tin foil w/lemon; cook for 8 mins until done. Prick the package with a fork to allow the steam to vent

Bake: Place fish in single layer in a shallow dish. Bake covered for 18 mins at 450 degrees
